Toad in the Hole Recipe With Buttered Potatoes
Ingredients:
- 1 pound link sausages
- 1 cup flour
- 1 teaspoon salt
- 4 eggs
- 1 cup milk
- 1 tablespoon yellow mustard
Instructions:
Crust:
- Spray a 9-inch baking dish (or 4, 4-inch baking dishes) with non-stick coating.
- In a large bowl, stir together flour and salt.
- In another bowl, beat together eggs and milk until light and foamy.
- Stir egg mixture into dry mixture, just until combined. Mixture will be lumpy.
- Place the prepared baking dish in the oven until hot.
- Remove from oven and pour in the batter.
- Return to oven and bake 15 - 20 minutes, until puffed and dry.
- Remove from oven and allow to collapse.
Sausages
- While crust is baking cook sausages in a skillet on the stovetop, until done.
- Place sausages inside crust and top with buttered potatoes.
Buttered Potatoes
- Boil new potatoes.
- Stir in salt and butter to taste.
