Toad in the Hole Recipe With Buttered Potatoes


Ingredients: 

  • 1 pound link sausages 
  • 1 cup flour 
  • 1 teaspoon salt 
  • 4 eggs 
  • 1 cup milk 
  • 1 tablespoon yellow mustard

Instructions: 

Crust:

  1. Spray a 9-inch baking dish (or 4, 4-inch baking dishes) with non-stick coating. 
  2. In a large bowl, stir together flour and salt. 
  3. In another bowl, beat together eggs and milk until light and foamy. 
  4. Stir egg mixture into dry mixture, just until combined. Mixture will be lumpy. 
  5. Place the prepared baking dish in the oven until hot. 
  6. Remove from oven and pour in the batter. 
  7. Return to oven and bake 15 - 20 minutes, until puffed and dry. 
  8. Remove from oven and allow to collapse. 

Sausages 

  1. While crust is baking cook sausages in a skillet on the stovetop, until done. 
  2. Place sausages inside crust and top with buttered potatoes. 

Buttered Potatoes

  1. Boil new potatoes. 
  2. Stir in salt and butter to taste.
